OK, so Spring 2020 was weird. Coronavirus interrupted our plans, just as many students were just beginning to tackle their interview projects. After Spring Break, we continued to meet online, even as students were scattered to various time zones and found themselves in challenging living conditions.
This required some flexibility, as some could no longer visit their restaurant in person, or were only able to go to restaurants outside of North Carolina. Many students hoped, too, that the restaurants where they conducted their interviews would continue to survive the pandemic. Here is a sampling of what the students were able to accomplish, even under quarantine conditions. I'm proud of their resilience and their continued engagement throughout this very disorienting semester.
Check out our Coronavirus Cookbook, too! It's filled with comfort foods that students found themselves wanting to make, or reminding them of family and friends as everything unspooled.
